Ingredients:
Grilled Nectarines:
2 nectarines, quartered and pitted
2 Tbs. Estilo Affinato di Modena
1 Tbs. Roasted Walnut Oil
Pinch of ground cinnamon
Pinch of ground nutmeg
Ingredients for 1 Cocktail:
1 grilled nectarine quarter, peel removed
4 oz. ginger beer
2 oz. gin or rum
1 egg white
Garnish:
Mint sprigs and grilled nectarine slices
Instructions:
Preheat the grill to medium-high heat or prep charcoals for a charcoal grill. Lightly brush the grill grates with oil to keep the nectarines from sticking.
Place the quartered nectarines in a large bowl and drizzle with balsamic and walnut oil. Season with ground cinnamon and nutmeg and gently toss to coat. Once the grill is hot, add the nectarines and grill on all sides until grill marks form. Remove from the grill and set aside to cool.
To assemble the cocktail, remove the peel (or skin) from 1 grilled nectarine quarter and place it in a large shaker. Add the ginger beer and gin (or rum) and muddle until the nectarine is thoroughly ‘puréed.’ Add the egg white and fill the shaker half-full with ice. Thoroughly shake and strain into a rocks glass. Garnish the cocktail with a sprig of mint and a slice of grilled nectarine.
