Floating Olive Branch
Fresh & Zesty Taco Salad

Serves 4 

Ingredients: 

Vinaigrette: 

¼ cup Jalapeño Infused Olive Oil 

¼ cup Habanero & Honey Balsamic Vinegar 

3 tablespoons fresh lime juice

1 tablespoon honey 

¼ teaspoon ground cumin 

Pinch smoked paprika 

Pinch Spicy Citrus Seasoning

 

4 cups baby lettuce greens 

¼ cup fresh scallions, chopped 

¼ cup fresh cilantro leaves 

1 ¼ cup rotisserie chicken, chopped 

1 cup canned black beans, drained and rinsed 

1 cup cherry tomatoes, halved 

1 each avocado, peeled and cut into wedges 

½ cup shredded cheddar cheese 

¼ cup red onion, peeled and diced 

¼ cup radish, shredded or sliced 

¼ cup corn kernels 

¼ cup crushed tortilla chips 

Instructions 

Place Jalapeño Infused olive oil, Habanero & Honey Balsamic Vinegar, lime juice, honey, cumin, paprika, and Spicy Citrus seasoning in a medium bowl and whisk to combine the vinaigrette. 

Place lettuce greens in a large bowl, add the scallions and cilantro and toss to combine. 

Divide the greens between plates or salad bowls. Top the salads evenly with chicken, beans, tomatoes, avocado wedges, cheddar, onion, radish, corn, and crushed tortilla chips. Drizzle the salad with vinaigrette or serve with the vinaigrette on the side.
