This is a seriously authentically flavoured oil, which was utterly delicious as an accompaniment dip for my bourbon maple red onion and feta sourdough bread (yes, this infused bread was made with one of the balsamics). The smokiness was the perfect intense-level for me personally, and it brought my appetiser to a whole new level. One of your best!
Cucumber, Mint & Peach Shrub
This shrub will soothe whatever ails you. Fresh cucumber and mint leaves are combined with our super fruity Peach Infused White Balsamic Vinegar for a bright and vibrant cocktail mixer. Try this shrub with gin or vodka and some plain seltzer water for a fun and fizzy libation.
Ingredients:
1 cup fresh cucumber, chopped
1/2 cup fresh mint leaves, chopped
1 cup granulated sugar
1 cup Peach Infused White Balsamic Vinegar
Instructions
Place cucumbers, mint, and sugar in a sealable container and stir to combine. Seal and place in the refrigerator for five days (up to 1 week), stirring every other day to ensure the sugar and fruit are well blended (the mixture should look juicy towards the end of the maceration time). Strain the mixture through a fine mesh strainer into a medium bowl, pushing as much juice through the filter as possible. Discard any fruity dregs left in the sieve. Add the vinegar to the bowl and whisk to combine. Pour the shrub into a clean jar, cover, and refrigerate for six months.
