Butternut Squash Salad
Ingredients:
1 Butternut squash, peeled and sliced ¼” thick
5 tbsp Seasons Coratina EVOO
2 tbsp Seasons Espresso Dark Balsamic Vinegar
1/4 cup red onions, sliced thin
1/4 cup feta cheese
1/4 cup pine nuts
Seasons Espresso salt to taste
1 tbsp brown sugar
Directions:
Drizzle 2 Tbsp. of Seasons Coratina extra virgin olive oil over sliced squash and roast in a pan over medium heat with until cooked through and golden. Remove and cool.
Mix Seasons the rest of the Seasons Coratina extra virgin olive oil and Seasons Espresso balsamic vinegar, reserve.
Add a few drops of water to the pine nuts in a bowl, mix in salt and brown sugar. Roast in a 350 degree oven until golden brown.
Layer the ingredients on a serving plate. First Butternut squash, onions, feta, pine nuts and finishing with the vinaigrette drizzled over top.
