Tomato and Peach Salad with Chilean Arbequina
3 medium fresh tomatoes, sliced
½ cup cherry tomatoes, sliced in half
3 fresh peaches, pitted and quartered
1 cucumber seeded, cut lengthwise and then sliced
1 small shallot, thinly sliced
4 tablespoons Seasons Chilean Arbequina Extra Virgin Olive Oil
2 tablespoons Seasons Peach Infused White Balsamic
12 basil leaves
⅓ cup toasted pine nuts (optional)
Seasons Alae Hawaiian Premium Salt, to taste
Freshly ground pepper, to taste
In serving plates, gently arrange the tomatoes, peaches, cucumber, shallot and pine nuts. Season with salt and freshly ground pepper.
Drizzle with Seasons Chilean Arbequina Extra Virgin Olive Oil and Peach Infused White Balsamic. Garnish with basil leaves.
