Smoked Salmon & Quinoa Breakfast Salad

Smoked Salmon & Quinoa Breakfast Salad
Serves 2

Ingredients: 

1 cup quinoa 

2 cups broth 

2 eggs, soft boiled, peeled and split 

4 oz smoked salmon 

1 cup baby spinach, cooked 

1 cup cherry tomatoes 

1 cup mixed olives 

2 teaspoons capers 

1/2 teaspoon crushed red pepper flakes (optional) 

1 teaspoon Fleur de Sel

2 tablespoons Gremolata Olive Oil 

lemon slices for squeezing 

Instructions: 

Boil quinoa in broth over medium-high heat for 10-12 minutes, or until tender. Let cool. Top quinoa with eggs, salmon, spinach, tomatoes, and olives. Sprinkle with a little red pepper and salt and drizzle with olive oil. Serve with some lemon slices for a little citrus squeeze.
