Seasons Strawberry Fruttato Shrub
2 cups strawberry, hulled and quartered
1 ½ cups white sugar
2 cups Seasons Strawberry Fruttato White Balsamic Vinegar
Champagne, Proseco, Cava or sparkling water
Combine the hulled and quartered strawberries and sugar in a large bowl. Stir together. Cover the bowl with plastic wrap and refrigerate overnight, stirring occasionally to redistribute and melt the sugar that settles at the bottom of the bowl. When the sugar has melted and a syrup has formed, use a fine mesh strainer placed over a bowl to strain the syrup from the strawberries. Use a rubber spatula to press out all the syrup. Discard or reserve the pressed strawberries for another use (mixed into yogurt is a delicious suggestion).
Whisk in Seasons Strawberry Fruttato white balsamic vinegar into the strawberry syrup and transfer the shrub into a clean, glass bottle or a large mason jar.
Seasons Strawberry Fruttato Shrub will keep in the fridge for a couple of months, but it probably won’t last that long:)
While the shrub is ready to drink immediately, its flavor will change and soften over the course of a few days.
To serve, mix 1 part Seasons Strawberry Shrub with 3 to 4 parts sparkling wine like Proseco.
This is equally delicious with sparkling water. Enjoy!
