Red Apple, Mache, Fig & Stilton Salad
Serves 4


4 cups of machê

4 cups of baby arugula

4 Tbsp. diced Fig Cake (available at Seasons Taproom- may substitute with 3 dried figs, sliced)

1/2 shallot, thinly sliced

1 large, crisp red apple such as Gala, or Granny Smith, thinly sliced

6 oz. Stilton, cut into 8 wedges

2 Tbsp. Seasons Family Reserve Extra Virgin Olive Oil

4 Tbsp. Seasons Fig Balsamic Vinegar

To make the vinaigrette combine and whisk the shallot, Seasons Family Reserve EVOO

and Seasons Fig Balsamic Vinegar in a small bowl. Set aside.

Place the machê, arugula, fig cake and apple slices in a large bowl. Gently toss the

salad with the vinaigrette to lightly coat. Transfer the salad to a platter or individual serving plates. Finish by adding the Stilton wedges.
