Crunchy Cashew Salad with Tropical Fruit

Crunchy Cashew Salad with Tropical Fruit
makes 2 large entree salads or 4 side salads


1 package broccoli slaw mix

1 cup frozen edamame, thawed  

3/4 cup pineapple, peeled and diced 

3/4 cup mango, peeled and diced 

1/2 cup cashews 

1/4 cup cilantro, chopped 

1/4 cup scallions, chopped 

1/4 cup chow mein noodles 

garnish: star fruit sliced and cilantro sprigs 

Sesame Orange Dressing: 

1 tablespoon soy sauce 

5oz. Honey Ginger Infused White Balsamic 

1oz. Garlic Infused EVOO 

2oz. Orange Infused EVOO 

1oz. Roasted Sesame Oil 


Combine salad ingredients in a large bowl (broccoli slaw, edamame, pineapple, mango, cashews, cilantro, scallions, and chow mein noodles). 

Combine sesame orange dressing ingredients in the salad dressing shaker bottle (following the diagram listed on the side of the bottle). Shake to combine and drizzle over the salad when ready to serve. Drizzle 1/4 cup of dressing over the salad and toss to combine. 

Garnish salad with star fruit slices before serving.
