Classic Wedge Salad with Grilled BBQ Bacon
6 slices bacon
1/4 cup Hoff BBQ Sauce
blue cheese dressing:
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon Mesquite Smoked Infused Olive Oil
1 tablespoon Smoked Olive Agrodolce
1 teaspoon Pepe e Aglio
2 tablespoons blue cheese crumbles
1 head iceberg lettuce, core removed and cut into wedges
1 cup cherry tomatoes, cut in half
1/4 cup blue cheese crumbles
1/4 cup red onion, peeled and minced
Preheat your grill to medium-high heat. Brush bacon with BBQ sauce and grill until crispy and cooked (basting with more BBQ sauce while it is cooking), flipping occasionally, about 3-4 minutes. Remove from the grill and cut into bite-sized pieces.
While the bacon is grilling, whisk together blue cheese dressing ingredients (mayo, sour cream, agrodolce, mesquite smoke infused olive oil, Pepe e Aglio, and blue cheese crumbled) until blended. Keep refrigerated until ready to serve.
Place lettuce wedges on plates and drizzle with dressing. Top each wedge with bacon, tomatoes, blue cheese, and onion.
