Beef Carpaccio

Beef Carpaccio


3 oz beef (Tenderloin) per person
Small hand full baby arugula
Gremolata (optional)
1.5 oz of your favourite tabouleh recipe
Parmesan (for garnish)
Seasons Milanese Gremolata Infused Extra Virgin Olive Oil (to taste)
Seasons Fleur de Sel Premium Salt (to taste)


Trim and clean the beef from fat & sinew. Roll tightly in plastic wrap & freeze. Remove from freezer & place in the fridge to semi-defrost.

Slice very thinly on a meat slicer & arrange on a plate in a circle.

Place tabouleh in the center, sprinkle the arugula & gremolata if using.

Shave the parmesan all over. Drizzle with some Milanese Gremolata Infused Extra Virgin Olive Oil & a sprinkle of Seasons Fleur de Sel. One or two rounds of cracked black pepper finish the dish.

Serve immediately!
