Warm Lentil Salad

Warm Lentil Salad
Serves: 4

Ingredients

For the Lentils:

1 Cup Puy Lentils (or French green Lentils or regular lentils)*
2 cloves garlic, halved
1 onion, halved
2 celery stalks, halved
1 bay leaf
Seasons Himalayan Pink, to taste
Seasons Pepe e Aglio (black pepper blend), to taste
3 scallions, chopped thinly

For the Picholine – Lemon Dijon Vinaigrette:

¾  cup Seasons Picholine Extra Virgin Olive Oil
3 – 4 Tbsp. Seasons Sicilian Lemon White Balsamic
¾  Tsp. Beaufor Extra Strong Dijon Mustard (available at Seasons Taproom)
1 clove garlic, finely minced or pressed
½ Tsp. Seasons Herbes de Provence
¼ Tsp. Seasons Himalayan Pink Salt (or to taste)
Seasons Pepe e Aglio (black pepper blend), to taste

To assemble:

5 to 6 heaping handfuls of baby arugula (or arugula & frisée mix)
2 or 3 radishes, thinly sliced
1 avocado, sliced into wedges
Lemon slices (optional)

Directions

Combine all the ingredients for the vinaigrette in a mason jar secured with a lid. Shake until well combined. Taste and adjust seasoning. Set aside until ready to use.

In sieve under running water, rinse the lentils thoroughly. Pour the washed lentils, onions, garlic, celery bay leaf and 2½ cups of water into a pot. Bring to a boil, and then reduce the heat to medium –low. Simmer for about 25 to 30 minutes. The lentils are cooked when the water has been absorbed and the lentils are tender (if the lentils are not tender but the cooking water has been absorbed, add ¼ cup of water and continue to cook). Once the lentils are fully cooked, fish out the celery, onion and bay leaf. Add in the chopped scallions, half of the vinaigrette and season with salt and black pepper. Toss well to combine and cover with a lid to keep warm.

In a large bowl, combine the arugula and sliced radishes with a few tablespoons of the vinaigrette and toss gently until evenly coated. Taste and add more dressing if desired.

Portion the arugula mix out onto serving plates and top with the warm lentils. Add a few avocado wedges and a lemon slice to each plate and serve immediately.

* Cooking time may vary depending on the type of lentils used.
