Rustic Gazpacho

Rustic Gazpacho
Serves: 4

Ingredients:

2 pounds tomatoes, peeled, seeded and roughly chopped
1 medium red bell pepper, roughly chopped
½ medium cucumber, peeled, seeded and roughly chopped
½ red onion, roughly chopped
2 garlic cloves, finely minced
⅓ cup Seasons Family Reserve Extra Virgin Olive Oil
⅓ cup blanched almonds (optional)
2 slices white bread, crusts removed, torn into big chunks
3 Tbsp. Seasons Sherry vinegar
1 medium fresh jalapeño, seeded and roughly chopped (optional)
Seasons Fleur de Sel (French sea salt), to taste
Seasons Pepe e aglio (black pepper blend), to taste

For the Garnish: (optional)
Croutons
Thinly diced tomatoes, cucumbers, jalapeno etc.
Fresh herbs
Seasons Family Reserve Extra Virgin Olive Oil

Directions:

Blend together the tomatoes, bell pepper, cucumber, onion, olive oil, almonds (if using), bread, Sherry vinegar, jalapeño, and garlic cloves; season with salt and pepper. Process until smooth, adding up to ½ cup water if necessary*
Taste and adjust the seasoning. Refrigerate for several hours before serving or serve immediately garnished with your toppings of choice.
* If your blender isn’t big enough, work in batches.
