Watermelon & Tomatillo Salad
4 Cups fresh seedless watermelon, cut in bite size pieces
1 Cup tomatillos, cut in bite size pieces*
1 Cup fresh blueberries (other seasonal berries may be substituted)
1 small shallot, finely chopped
1/4 Cup Seasons Basil Infused Olive Oil
1/4 Cup Seasons Watermelon Whole Fruit Rosé Balsamic
1/4 Teaspoon Himalayan pink salt
Seasons Pepe e Aglio (black pepper blend), to taste
1 Tablespoon minced fresh basil, to garnish
Combine all ingredients in a large bowl; mix well with a slotted spoon to blend flavors. Taste and adjust seasoning as necessary. Cover and refrigerate for 30 minutes. Transfer to serving bowls and garnish with freshly chopped basil. This is the perfect summer side salad to pair with grilled seafood, meat, or chicken.
*About 4 tomatillos, husked and rinsed.
