Vesuviotti Pasta with Easy Meat Sauce
2 -3 Tbsp. Seasons Family Reserve Extra Virgin Olive Oil
1 ½ lb lean ground turkey or beef
1 medium onion, finely chopped
3 cloves garlic, finely minced or pressed
½ tsp. red pepper flakes
Seasons Pepe e Aglio (black pepper blend), to taste
Seasons Himalayan Pink Salt, to taste
1 Jar (25 oz.) Cortazzo’s Pomodoro sauce (available at Seasons Stores) or your favorite homemade tomato sauce
1 Tbsp. Seasons Tuscan Blend Seasoning
2 cups water
¼ cup minced fresh parsley
1 package (500g. / 1.1 lb) Vesuviotti pasta (available at Seasons Stores)
¼ cup minced fresh herbs (minced fresh basil & minced fresh parsley)
¼ cup freshly grated parmesan
Family Reserve EVOO (optional)
Heat Seasons Family Reserve olive oil in a large skillet on medium heat. Add the onions and sauté for about 5 minutes, stirring occasionally, until the onions are softened.
Add the ground turkey (or beef), garlic, red pepper flakes, Himalayan Pink salt and Pepe e Aglio. Cook, stirring occasionally, until the meat begins to brown. Add 1 cup of Cortazzo’s Pomodoro sauce to the pan and scrape any browned bits from the bottom of the pan.
When most of the moisture has bubbled off, add the rest of the sauce to the pan along with Seasons Tuscan Blend Seasoning. Cook for 2 to 3 minutes, then add 2 cups water. Bring to a boil, lower the heat to a simmer. Cover, leaving the lid cracked. Let the sauce simmer and thicken, 10-15 minutes.
Meanwhile, bring a large pot of salted water to boil and cook the Vesuviotti pasta according to the package directions just until al dente. Drain the pasta, reserving ½ cup of the cooking water.
Return the pasta to the pot. Toss with the meat sauce and ¼ cup minced parsley until well combined. If needed, season with additional salt and black pepper blend and adjust consistency with the reserved pasta water.
Serve with freshly grated Parmesan, a sprinkling of minced herbs and a drizzle of Seasons Family Reserve EVOO.
