Seasons Strawberry-Rhubarb Shrub Cocktail
1 cup fresh strawberries, stems removed and sliced
1 cup fresh rhubarb, chopped
2 cups granulated sugar
1 cup Seasons Strawberry Balsamic Vinegar
Club soda, champagne, or vodka
Combine strawberries, rhubarb, and sugar in a bowl and allow to macerate for 2-3 days in refrigerator, stirring occasionally.
After 2-3 days, strain the resulting juice from the strawberry/rhubarb mixture by pressing the fruit against the sides of a colander in order to extract as much juice as possible.
(Tip: Reserve fruit for another use; add to muffins or to your favorite olive oil cake recipe)
Combine juice with Seasons Strawberry Balsamic. This mixture, or shrub, is ready to be used right away and will keep for several weeks in the refrigerator.
For Spring Entertaining: Add 3-4 tablespoons of shrub to 8 oz. of club soda and garnish with fresh mint and/or a slice of lime. Alternatively, shrub can be mixed with champagne, vodka, or any beverage of your choice.
