Plum-Chipotle barbecue sauce
This homemade BBQ sauce is great on grilled chicken, duck, turkey and ribs.
1 Lb. ripe plums (4 medium)
1/2 cup chopped shallots
3 Tbs. Seasons Maple Infused Balsamic Vinegar
1 Tbs. Seasons Pinot Noir wine vinegar
1 Tbs. Worcestershire sauce
1 Tbs. minced garlic
1 tsp. minced seeded canned chipotle chile in adobo sauce
1 tsp. Seasons Alderwood Smoked Salt
1/8 tsp. ground cloves
Place all the ingredients in a heavy-duty 3-quart saucepan and bring to a boil. Turn the heat down to medium low, cover and simmer, stirring occasionally, until the plums break down, about 8-10 minutes.Uncover and simmer until thick, 7 minutes.
Purée the sauce in a blender until smooth. Use or keep refrigerated for up to 1 week.
