Mediterranean Feta Salmon with Tomatoes & Traditional Balsamic
4 (5 ounce) salmon steaks or fillets, bones removed
4 ounces Feta cheese, cubed
1 large tomato, diced
3 Tbsp. Seasons Family Reserve Extra Virgin Olive Oil
1 Tbsp. Seasons Tuscan Blend Seasoning, divided
2 Tbsp. Seasons 18 Year Aged Traditional Balsamic
Seasons Himalayan Pink Salt, to taste
Preheat the broiler and place a rack about 4-5 inches below the heating element.
Warm a large oven-safe skillet with olive oil over medium-low heat. Season the salmon with the Tuscan Blend Seasoning. Raise the heat to medium-high. Place the salmon steaks in the pan (if using fillets, skin-side up). Cook until golden brown on one side, about 3 to 4 minutes. Turn the fish over with a spatula and cook 3 minutes longer. Turn off the heat. Top each fillets with feta cheese and tomatoes. Place the skillet under the broiler for about 5 minutes. Serve over a bed of grilled asparagus and drizzle with Seasons 18 Year Aged Balsamic.
