4 medium juicy tomatoes, cut in wedges
1 cucumber, sliced
1 green bell pepper, cored, sliced
1 medium shallot, thinly sliced
½ cup pitted Kalamata olives
4 Tbs Seasons Mint Agrumato Olive Oil
1-2 Tbs Seasons Barrel-Aged Apple Cider Vinegar
8 oz (or more) creamy Greek feta cheese, diced
½ Tbs oregano, fresh or dried
½ tsp Seasons Pepe e Aglio
Seasons Cyprus Flake Sea Salt, to taste
Place first five ingredients in a large salad bowl. Season lightly with Cyprus Salt and Pepe e Aglio and add the Mint Agrumato Olive Oil and Barrel Aged Apple Cider Vinegar.
Gently toss ingredients together. Sprinkle with feta and oregano. Enjoy!
