Cucumber, Tomato, and Avocado Salad
1 seedless cucumber, cut with a spiralizer (or sliced)
2 plum tomatoes, sliced
½ small red onion, sliced thinly
1 cup arugula
1 avocado, cut in bite size pieces
⅓ cup Seasons Manzanilla Grand Cru Extra Virgin Olive Oil
3 Tbs Seasons Grand Cru Lemon Whole Fruit Balsamic Vinegar
1 Tbs fresh cilantro, chopped
⅛ tsp roasted garlic salt
⅛ tsp Seasons Pepe e Aglio
2 Tbs pepitas
½ tsp Seasons Spanish Smoked Paprika
Combine all ingredients, except pepitas and smoked paprika, in a large stainless bowl. Toss gently to combine.
To serve, divide between 4 plates and sprinkle with pepitas and smoked paprika.
