Chopped Thai Chicken Salad

Chopped Thai Chicken Salad
Serves 8-10

Ingredients

2 boneless chicken breast, cooked
1 small head savoy cabbage, shredded
1 large carrot, shredded (1 ½ cups)
1 green papaya, shredded (1 ½ cup)
½ cup fresh cilantro, washed and chopped
½ cup scallions, sliced
½ cup rough chopped peanuts

Dressing

2 Tbs Seasons Garlic Infused Olive Oil
2 Tbs Seasons Coconut White Balsamic
2 Tbs soy sauce
1 Tbs fresh squeezed lime juice
3 Tbs Southeast Asian Sweet Chili Sauce [Available at Seasons]
¼ cup Spicy Thai Peanut Butter [Available at Seasons, Eliot’s Adult Nut Butters]
¼ cup water

Directions

Combine dressing ingredients in large stainless bowl, whisking until smooth. Add all salad ingredients except peanuts. Toss to combine.

Chill. Sprinkle with peanuts just before serving.
