Butternut Squash & Apple Soup

Butternut Squash & Apple Soup
Serves 4

Ingredients (Serves 4-6):

4 tbs Seasons Baklouti Green Chili Fused Olive Oil

1/4 cup Seasons Honey Ginger White Balsamic

1 large shallot, peeled and diced

1 garlic clove, peeled and minced

2 lb. butternut squash, peeled, seeded and chopped

2 gala apples, peeled, cored and diced

3 sprigs thyme

tsp Seasons Fleur de Sel

1 1/2 tsp ground cumin

1 tsp fresh ground ginger

1/2 tsp ground nutmeg

1/4 tsp Seasons Spanish Smoked Paprika

2 cups chicken stock

1/2 cup unsweetened coconut milk

1 cup of water

Garnish:

4 teaspoons crème fraîche (or sour cream)

2 teaspoons fresh chopped chives

In a stock pot, heat the Seasons Baklouti Green Chili Fused Olive Oil over medium

heat. Add shallot and garlic; cook for 5 minutes. Add squash, and cook, stirring

occasionally, until soft, about 10 minutes. Add apples, thyme, Seasons Coconut Lime

Sea Salt, cumin, ginger, nutmeg and Seasons Spanish Smoked Paprika. Stir and cook for

1 minute. Add the chicken stock, water, coconut milk, Seasons Fleur de Sel and Seasons

Honey Ginger Balsamic Vinegar (enough liquid to cover). Bring to a boil. Reduce heat to

simmer, cover the pot, and cook for 20 minutes or until the vegetables are tender. Add

everything to blender and puree. You can thin this soup by adding more water to adjust

to your taste. To serve, ladle into soup bowls: garnish with crème fraîche (or sour cream)

and fresh chopped chives.
