Artichoke Turkey Tomato Panini
4 slices sourdough bread
2 Tbs La Favorita Crema di Carciofi e Aglio/Artichoke and Garlic Cream (available at Seasons)
2 Tbs La Favorita Pesto alla Genovese/Basil Pesto (available at Seasons)
2 Tbs The Gracious Gourmet Caramelized Onion Confit (available at Seasons)
2 oz grated mozzarella cheese
6 slices roasted turkey
1 large tomato, sliced into 6 slices
1½ cups spinach
2 Tbs Basil Infused Olive Oil
2 Tbs Fig Balsamic Condimento Vinegar
Preheat panini press to medium heat or a nonstick pan on medium.
Assemble sandwich by spreading Artichoke and Garlic Cream on one slice of bread and Basil Pesto on the other. (Use half of each ingredient for each sandwich.) Layer spinach, Caramelized Onion Confit, tomato slices, turkey and mozzarella cheese on bread. Drizzle with Fig Balsamic and cover with other slice of bread. Repeat for remaining panini.
Drizzle bread with Basil Olive Oil on both sides then place on the hot panini press. Close lid and grill sandwich for 6-7 minutes or until bread is toasted and cheese is melting.
If using a nonstick pan, place sandwich in pan and place a heavy skillet on top on the sandwich and weight down with a heavy can – flip over and brown.
Slice in half and serve with your soup or salad.
