Australian Early Frantoio
This is a very good, early harvest, Frantoio oil from Australia that captures the typical fresh-cut-grass flavors of the variety. It is a very well balanced oil with bitterness and pungency almost identical in intensity melded with strong floral fruitiness. It has nice, light, ripe fruit characteristics, but its fruitiness is mostly green flavors such as herbs, green apple, green banana, mint, cinnamon, and black pepper. The dominant flavor though, is fresh-cut-grass, which Frantoio is known for. It is a very fresh, world-class, medium intensity oil.
Uses: Spring Salads, Mozzarella, Grilled Vegetables, Potatoes, and Pasta.
